Chicken Devine

I love casseroles and there are so many nice and delicious recipes out there. With all those fabulous recipes, I still created my own version of this chicken devine casserole for our supper Friday night. I took a few ideas here and there and came up with this :

The bottom layer is cooked basmati rice, next is cooked boneless chicken, onions and mushrooms and then a layer of steamed broccoli. Over that I poured a mixture of cream of mushroom soup and mayo then spread a lot of shredded cheese (I used a mixture of mozza and old cheddar) and the final layer was bread crumbs and butter.

It was delicious.

We must be on a similar wave length with food. This is one of our favourite dishes. Only difference is I make my own cream sauce to pour over. Basically just a bechemel or white sauce with lots of crushed garlic, then sprinkle the top with parmasean cheese. I also add in carrots to the broccli mix. Yummmmmmmy! Think I might have to make this for dinner tonight.

Oh carrots would be good, have to add them next time. I think this new recipe is a work in progress for me. And yes, on better days I would have made a homemade cream sauce but I was having a ''weak moment'' he, he, he.

Hey, there is nothing wrong with using a can of cream of mushroom soup to save some time!! It is enough that we take the time to make such delicious and healthy meals for our families. It isn't easy being super women!! I sure love a good bechemel sauce though...hee hee...looks delicious Vickie. I never used to like caseroles when I was younger, but thank goodness I grew out of that.
